I, along with my team, have crafted this cocktail menu- “Mystic Assam, Edition 1”, to bring out the local flavours and cultural connection of food and beverages consumed by the people of Assam.

Each sip is a journey into the extraordinary, promising unforgettable moments and a celebration of diverse flavours originating from Assam. The concept revolves around a day spent with a local in the villages of Assam and one’s interaction with different types of food and beverage consumed throughout the day. Every drink has been crafted carefully using fresh and authentic ingredients and made in the same way that dish is made traditionally. In our culture, a tea is never bad, its just tea. And our Mar-Tea-ni is also not complete without Ceylon Olives or Jalpai, a native fruit which opens up all the exotic flavours. Bor-Thekera is a sour fruit Garcinia Pedunculata, widely used in traditional Assamese cuisine. This tangy fruit is typically dried and added to dishes for a burst of sourness. By blending the thekera with earthiness of Carrot & freshness of Mandarin Orange, the drink brings the essence of Assamese culture to life in a flavorful and refreshing way, reflecting the region ‘s deep connection to its land and traditions.

Pitika is mash of either a charred Tomato & Green chilli, mustard & spices or the same with Eggplant or Potatoes. No Assamese meal is complete without starting with any of these with rice. As the name suggests, this cocktail is a clarified version of Bhilai or tomato Pitika with rice crackers & dehydrated bhilai pitika powder to avoid any wastages. It’s a Zero waste Cocktail. This will take you to feeling of satisfaction in simpler things.

This Highball cocktail with jackfruit & mango ginger for its fruity & earthy aromas and Jackfruit-joha rice foam is a reminiscence of the indigenous people of assam of a dessert Peetha, at the end of their meal.
